Hors d’oeuvres are defined as small bite sized food that are, generally, served right before a larger meal. They can be served hot or cold and are mostly a savory option rather than a sweet option. Depending on how you’re planning your banquet, you could have just hors d’oeuvres or, you could plan them for the before dinner entertainment. If you’re planning on having dinner during the banquet, you’ll need to decide how many varieties of hors ‘d’oeuvres you need to satisfy your guests before dinner so that they’re not too full, but they’re not left hungry. It’s a delicate balance and choosing the proper ones for your event depends on so many different factors that it can be hard to navigate planning a banquet just because of the strange logistics bits. Don’t fret though, we’ve created a guide to help you determine what you need o know the answers to before successfully planning a banquet around your hors d’oeuvres.

What Time of Day is the Banquet?

Planning a banquet can be very stressful. When the kings and queens of old would throw parties, it would be a coordinated, planned affair that was handled by multiple people, but suddenly this responsibility landed entirely on your shoulders and now you have to make heads or tails of the party planning process. Start small and expand your field of questions as you go. How do you eat an elephant? One bite at a time. Determining what time of day your banquet will be at actually determines more than the number that will go onto the invitation card. It’s going to help you decide how much food you need. If you’re including dinner, you need less food than you would if you weren’t including dinner. People each eat around four to five bites, or rather appetizers each hour. That only applies to the first hour though. If you’re planning on the banquet stretching on for about two hours, your guests can be expected to eat less with every hour that passes. The second hour averages out at about two to three bites per hour. That means you’ll need around six to eight bites for each person. This will differ based on whether you’re planning on having dinner after that. We suggest planning on two to three bites per person if you’re going to be having dinner afterward.

The Many Kinds of Hors D’Oeuvres

Once again, this answer depends on another questions. How many people do you intend to serve? Most of the time, folks will make the mistake of offering far too many options for their banquet when really the only needed a rather small amount. Worse still, they’ll offer a whole load of options and a very small amount of each one. This isn’t a test of economics, there’s no need to try and create false scarcity. Balancing your menu is easier than it sounds too. Base it all on the bites needed for each person and then create a variety using a simple equation: one meat, one cheese, one veggie or fruit and one fish or shellfish item. This creates a variety without making anything overwhelming.

We recommend choosing are 3 trays for anywhere between 25 to 75 people for an event. We also suggest choosing one of meat plates, like the sesame seared tuna or lollypop lamb chops with oriental sauce for the main course of your hors d’oeuvres set-up. We recommend choosing something like our fruit and cheese plate to match up with it alongside something like our baked brie topped with melted butter and brown sugar or our stuffed mushroom caps with boursin cheese to complete the ensemble. Having enough of a variety will leave your guests happy and satisfied.
